Easy / Huntley & Palmers Flatbread Minis Basil & Parmesan

Why take that sandwich for the millionth time. Boring! Try this healthy platter alternative. Think tapas in a lunch box, a grazing plate for your desk! 

We know how hard it is to be super prepared and take healthy lunches to work. So, we've put together this lunch box inspiration so you can grab the products from the supermarket

Ingredients

Chicken breast
Olive oil
Salt & pepper
Cos lettuce
Cherry tomatoes
Radish sliced
Cucumber sliced
Sicilian and Kalamata olives
Tzatziki. We used Lisa's http://www.lisas.co.nz/
Basil pesto hummus. Again, we used Lisa's

 

Steps

Step 1.
To cook your chicken breast; rub with olive oil and a small pinch of sea salt and black pepper, then cook in a pan on medium heat for 8 minutes, or until golden and cooked through, turning halfway

Step 2.
Remove the chicken to a board and slice

Step 3.
Combine the salad ingredients

Step 4.
Add the above, plus the olives, Tzatziki and Basil pesto hummus to your lunchbox and you're good to go!
